Chile Lime Whole grain crackers

Chile Lime Whole Grain Crackers

Goal - to create a cracker with a spicy, citrus-y snap..

Dough
200 g Whole grain flour
200 g Corn Meal
80 g Olive Oil
1 Tbsp Ancho powder
1 tsp Smoked paprika
1/4 tsp Chipotle powder
1/2 tsp Citric acid
1/2 tsp Potassium bicarbonate
1/2 tsp Salt
1 Tbsp sugar
Zest and Juice of a lime
225 g Water

Dressing powder

1/2 tsp each of Ancho powder, smoked paprika, salt, sugar, citric acid

Combine flours and oil. Mix flours and oil until well combined. Add other dry ingredients and lime zest. Mix well. Add lime juice , mix. Add water slowly and mix until it holds well as a dough. Roll thin. I found a tortilla press worked very well to make thin cracker. Bake 35-40 minutes at 325 degrees F. While still warm sprinkle with dressing powder.

Next things to try: lime powder, masa harina instead of corn meal, up the chile powders
